Welcome to my site! Yeah I read that was a drawback, but if you turn the bird back over for the last 30 minutes of cooking, the skin then browns. But then you of course risk drying out the breast again and it would be hard to turn over a cooked 20 lb+ turkey. :)</description>

		<description>i've done chickens upside down and it DOES make the breast meat more juicy. the only down factor is that the skin over the breast is worthless because only the top half of the bird gets nice and crispy.</description>
